Going to the zoo! 烤餅乾, 鮪魚三明治

Lat Friday was Good Friday and also the last day of school vacation. I thought it's the perfect day to take my little niece to the local zoo. She is two and a half years old, and this is her first time in the zoo. I thought to see live animals in front of her (rather than in a book) would make her excited.
 
My husband went to a busy fish market with my father-in-law. It would take them a good half day to come back. My mother-in-law and me took my little niece to the zoo. I baked some animal cookies and cheese cookies for snack on the road. I also made tuna sandwiches for lunch for everybody, starting from baking the bread.

Raspberry walnut bread
  • 300 g bread flour
  • 100 g whole wheat flour
  • 2 1/2 Tbsp sugar
  • 3/4 tsp salt
  • 1 1/2 Tbsp butter
  • 180 g water
  • 100 g milk
  • 3/4 tsp bread machine yeast (instant yeast)
  • 1/3 cup raspberry raisins and chopped walnut (combined)

1. Combine all ingredients in a bread machine. Use the dough function.
2. After a dough is formed, let it rise until twice in volume.
3. Roll it out into a rectangle, about 8" x 10".
4. Roll it into a log from the short side (8" side).
5. Put it in a pullman pan (4" x 4" x 8"). Let it rise until 80% to 90% full).
6. Put on the lid and bake at 320 degree Fahrenheit for 55 min. (I was also baking cookies, so that's why I use such low temperature, but I bake it longer.)


After let cool overnight, I prepared the sandwich in the morning. I like tuna sandwich, you can put anything you like and it still taste very good. The things I like to put is: canned tuna, mayonnaise, shredded carrots, sliced black olives, sweet corn, celery, etc. 

As you can see from the picture, I put sliced Japanese cucumber and cheese on the other side of the sandwich. Everybody loved it!
